The type of eggplant you picked is a good "intro" eggplant because the flavor should be mild and it shouldn't be too seedy (the big purple ones can have a lot of seeds, which can be annoying). Then rine it in water dip it in a beaten egg then in bread crumbs then fry it in oil.
